I hope everyone had a great weekend!! I may, or may not, do a post about our weekend...I don't really have much to say, just a few funny pictures and moments that I captured. NBD...the real excitement for today is I'm having my very first guest blogger!!

I am delighted to be Melissa’s very first guest
blogger. To be honest I wasn’t sure what role a guest blogger
played, but I thought I would post exactly what I would post on my own
blog.

Cauliflower Mashed Potatoes
(The kicker, their not really potatoes!!)
1 head cauliflower, cleaned
1 Tbsp. non-fat sour cream
1/3 cup feta cheese
salt and pepper to taste
Directions
Clean and cut cauliflower into small, easy to boil
pieces.
Boil cauliflower until very, very soft.
Drain cauliflower well.
Combine all ingredients in a food processor.
ENJOY!!

ReplyDeleteWe LOVE mashed cauliflower at our house! We throw cream cheese in there, which I'm sure makes it less healthy, but MMM...so good!
